Buttermilk Praline

2 cups sugar
1 teaspoon baking soda
pinch of salt
1 cup buttermilk
2 tablespoons butter
1 1/2 cups pecans
1 teaspoon vanilla

Combine in a large saucepan the sugar, soda, salt and buttermilk. Quickly bring to a boil, stirring constantly, until mixture takes on a creamy color (210 degreees). I always test to drop tablespoonful of candy into a cold water in cup to form soft ball stage. Remove from heat and add butter, nuts and vanilla. Beat by hand until mixture loses its gloss about 3-5 minutes, then drop quickly in mounds on wax paper. It thickens very fast. Yield: 12 to 15 patties.
